Koibito Poke was founded in 2018, and is an award winning Poke restaurant based in Scottsdale, Arizona. Our management team is led by Todd Stottlemyre, a 3 time World Series Champion, and best selling book author.

Each Koibito Poke guest is treated to an individualized "build-a-bowl" experience with many fresh and incredibly nutritious ingredients to choose from, as each bowl can be vastly different from the next including the option to fit any dietary programs: vegetarian, vegan, gluten free, and keto.

We truly feel that Koibito Poke is positioned perfectly to fill the demand created by the general public's ever-increasing awareness of the numerous health benefits of consuming delicious proteins and vegetables in their natural state. Our goal is to set the standard for hospitality and customer service in the restaurant industry.

Our business model features a smaller footprint, a low cost of entry and below industry standards food and labor costs. Right now, there is no national "player" in the Poke space, and we feel like we have all the pieces in place to become that national leader in a very short time.
